HOW TO MAKE ZOBO DRINK
INGREDIENTS
Zobo leaves----1 small custard cup
Dates(debino)----1/2 small custard cup
Pineapple---1 big size
Cucumber---2 big ones
Ginger
Cloves
PROCEDURE
1. Put your zobo leaves in water and rinse off immediately.
2. Wash your pineapple thoroughly, peel the back and cut the flesh into tiny pieces. Do same to the cucumber
3. Wash your ginger very well and crush loosely with the cloves. Soak your dates to soften. You can do this overnight.
4. In a pot, put the zobo leaves, add 5 litres of water and put on fire. Add the crushed ginger, cloves and the fruit peels. Allow to cook for about 35-40 minutes then remove from heat and sieve ( You can add a little more water to what you sieved out and recook to bring out all the juice from the zobo leaves). Allow to cool
5. While it cools, blend the pineapple, cucumber and softened dates then sieve out the juice and pour into your cool zobo.
6. Put zobo inside freezer to chill or put ice cubes inside zobo.
