Ingredients
1 ½ cups (190g) all-purpose flour
1 cup (200g) sugar
½ cup (115g) unsalted butter, softened
2 large eggs, room temperature
½ cup (120ml) whole milk
1 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla extract
Instructions
Cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined. Divide the batter evenly into a lined muffin tin. Bake in a preheated oven at 350°F (175°C) for 18–20 minutes, or until a toothpick inserted comes out clean. Let cool slightly before serving.
